    "Baby Back Ribs are a fravorite on the grill. For camping, marinate the ribs overnight, pat them dry before applying a dry rub, and store them in a Ziploc in your cooler until you’re ready to grill. They are grilled dry and bbq sauce is applied when served."

We made common mistakes when grilling ribs, cooking directly over the coals and adding sauce. We ended up with charcoal burnt tough meat.
Now we use a dry rub, a combination of ground cumin, paprika, chili powder, garlic and italian herbs.
To bbq we pile the hot briquets in the corner, 30 or more, then place the ribs away from the pile and close the cooker lid with a small gap, enough air circulating to keep the briquets lit. Slow cooking keeps the ribs moist with an outside patina of browning.

We serve the ribs with bbq sauce on the side.
