Hobo Dinner

A camping recipe from Robin. This is a very quick and tasty meal. You just unroll the foil and dig in. Very little cleanup needed.

Prep Time: 30 minutes

Ingredients:

  • 2 pounds ground beef
  • 1 medium potato per person
  • 2 cans corn or any of your favorite vegetables
  • Lawry's Seasoned Salt
  • butter
  • salt and pepper

Preparation:

Make hamburger patties ahead of time at home, then place them in a baggie or wrap in foil, and store them in your cooler. At the campground, tear one sheet of heavy duty foil for each person, about 14 inches long. Place a hamburger patty in center of foil, season with Lawry's, and salt and pepper to taste. Peel potatoes, slice thin or cut into small cubes, and place over meat. Season potatoes too. Add a pat of butter. Place vegetable next to the meat and potatoes. Bring foil ends up and fold over until 2-3 inches from meat, and then fold up each side in the same manner. Place over the fire or grill.

After 15 minutes, carefully remove with tongs and open each foil pack being careful because they are full of very hot steam. Cut into hamburger to check for doneness.

This can be made at home too. Use a 350 degree oven, place foil packs on a cookie sheet, and bake for 30 minutes.
