Breakfast Fritatas - Mexican or Italian Style


This dutch oven recipe for breakfast or brunch is written by the Mad Chef of the Forest. These dutch oven breakfast fritatas can be made in an Italian or Mexican style. Both versions are listed separately in ingredients, but the cooking instructions are the same. It is a delicious and easy camping recipe that can be made over the campfire in a # 10 dutch oven.

  • Italian Style Fritata - Ingredients

  • 10-12 eggs
  • olive oil
  • garlic (chopped)
  • zucchini (diced 3/4 inch)
  • broccoli (small fleurettes)
  • mushrooms (cut large mushrooms in quarters and cut small mushrooms in halves)
  • Italian herb seasoning
  • salt & pepper
  • Toppings:
  • thinly sliced tomatoes
  • fresh basil leaves
  • shredded mozzarella cheese

  • Mexican Style Fritata - Ingredients

  • 10-12 eggs
  • olive oil
  • onion (chopped)
  • red & green bell pepper (diced 3/4 inch)
  • jalapeno (chopped, no seeds)
  • Mexican blend seasoning (cumin, chili powder, garlic powder, oregano, paprika)
  • salt & pepper

  • Toppings:
  • thinly sliced tomatoes
  • fresh cilantro leaves
  • shredded Mexican four-cheese


  1. Use a Use #10 dutch oven
  2. Sautee the veggies along with the seasonings for a few minutes and stir constantly (on bottom coals).
  3. Add the mixed eggs.
  4. Bake until the eggs are firm (coals top & bottom).
  5. Now add the thinly sliced tomatoes topped with the basil or the cilantro leaves, and then add the shredded cheese.
  6. Bake (with just top coals) until the cheese is completely melted, about a minute or so.
