Chili-Tamale Casserole

A camping recipe from Susie Osborn. Susie says this recipe is, "Very fast, very good, very filling."

Prep Time: 15 minutes

Ingredients:

  • tortilla chips
  • jar of tamales
  • can of chili
  • minced green onion
  • minced peppers
  • sliced ripe olives
  • shredded cheddar or jalapeno jack cheese

Preparation:

Crumble tortilla chips in a microwave safe casserole dish and top with unwrapped tamales, cut into 1-inch chunks. Top this with a can of chili and heat in a microwave for about 5 minutes. Top with minced peppers, onions, ripe olives, and cheddar cheese. Return to the microwave for 1 minute to melt the cheese. Can also make in a skillet by putting the chips on top of the tamales and chili.

Servings: 2 - 4
Preparation time: 15 minutes
