A camping recipe from Tanya Craig. The wonderful smell of the curry will bring everyone running, even the little ones. I have four children and this is one of the few meals everyone in the family will eat.
Cook Time: 40 minutes
Ingredients:
  • 1 large onion, chopped (1 cup)
  • 1 tablespoon curry powder
  • 3 tablespoons butter
  • 1 pound ground beef
  • 2 tomatoes, peeled and diced (optional)
  • 2 cups peas, corn (what ever you have on hand)
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • rice (brown is nice but white will do fine)
Preparation:
In a large frying pan, lightly saute onion in butter with curry powder; push to one side. Shape ground beef into a large patty in same pan; brown five minutes on each side, then break up into chunks. Stir in tomatoes, peas (or other veggie) and seasonings; cover. Simmer 30 minutes to blend flavors. Serve with brown/white rice.
