A camping recipe from Bruce and Dorothy. I almost didn't share this. This recipe has evolved from an old Betty Crocker cookbook. I changed a few things and have been taking them camping for 20 years or so. My grown up kids still ask me to make them when they come over. Try them at home a few times first and get comfortable with the recipe. I always mix up a dry batch and take them in an air tight bowl when we camp.

Cook Time: 5 minutes
Ingredients:
- 3 cups all purpose flour
- 1 cup corn meal
- 2 tablespoons baking powder
- 3 tablespoons sugar
- 1 teaspoon salt
- 1/4 cup oil
- 4 eggs
- milk
Preparation:
Mix all dry ingredients. Add eggs, oil, and enough milk to make a fairly thin batter (3 cups?). Let it sit for 3-4 minutes and the batter will thicken up once the corn meal soaks up some of the milk. Use fry pan or griddle, Pam spray or bacon grease. Cook until the bubbles break and don't fill back in and they start to dry out around the edges. Flip and cook for another minute or so.
Top to your liking. Add fruit if you wish. Makes about 12, 6 to 8 inch cakes.
