Easy Chicken Pot Pie

A camping recipe from Judy. Bake this recipe in your RV, or prepare it in a Dutch oven.

Prep Time: 1 hours, 30 minutes

Ingredients:

  • 1 fryer chicken
  • 2 potatoes
  • peas and carrots
  • 2 cups chicken broth
  • 1 can cream of onion soup
  • 1/2 cup margarine
  • 1 cup milk
  • 1 cup flour
  • salt and pepper, to taste

Preparation:

Boil one fryer and cool, then remove meat from bones and shred. Peel and chop two potatoes and cook until not quite done, like 6 minutes. Put the chicken in a 9x13 casserole dish and put the potatoes and 1 small bag of frozen peas and carrots over the chicken. You can also use canned peas and carrots instead of frozen. Sprinkle with 1/2 teaspoon salt and pepper, to taste. Mix 2 cups chicken broth and 1 can cream of onion soup (or cream of chicken) and pour over the chicken and vegetables.

For the crust, melt 1/2 cup of margarine or butter and add one cup milk and one cup flour. Mix well and carefully pour over the chicken mixture.

Bake at 350 degrees, until brown and bubbly.

Servings: 6 - 8
Preparation time: 1 1/2 hours
