Spicy Chicken Casserole

A camping recipe from Jim Abbott. This is an easy and quick recipe which can be varied according to one's tastes when you are at the late in the day hungry stage and don't want to spend a long time over a stove. All of the items are staples which can be purchased in advance.
Prep Time: 45 minutes
Ingredients:
  • 2 6-ounce cans boned chicken with broth
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 teaspoon black pepper
  • 2 teaspoons paprika [optional]
  • 1 teaspoon garlic powder
  • 1/2 small fresh onion, chopped
  • 1/4 teaspoon red pepper or hot sauce
  • 2 cups white rice
  • water, sufficient to mix soups
Preparation:
Mix liquid ingredients (soups and water) in 3 quart pot and heat slowly until soup is mixed well with water. Add chicken, seasonings and rice. Stir well to mix. When mixture approaches boil, turn down heat, cover and cook until rice is done. [approximately 25-30 minutes] Do not lift lid while cooking. After 25 minutes, check to determine whether rice is done. If not, remove lid and continue cooking on low heat.

Serve with fresh or canned vegetable(s) of choice.
