A camping recipe from Cheryl Kean. This stew recipe is versatile - you can add potatoes, if you cut them small, or you can add any kind of sausage.
Prep Time: 30 minutes
Ingredients:
- 3 yellow squash
- 2 large sweet onions
- 1 large green pepper
- 2 cloves garlic
- butter
- salt and pepper, to taste
- 1 tablespoon water
Preparation:
Cut vegetables into chunks and add 2 pats of butter, garlic (minced or chopped), salt and pepper. Wrap in foil and sprinkle with about 1 tablespoon of water (this will help to steam the veggies). Then set over fire for about 30 minutes or longer depending on how much you like your vegetables cooked.
