Dutch Oven Cornish Game Hens

A camping recipe from Robin. I love to cook and use my Dutch oven. I just made this recipe up while walking through the store wondering what would be different for camping!
Prep Time: 1 hour, 15 minutes
Ingredients:
  • 1 stalk celery
  • 1 small bag mini carrots
  • 3 medium potatoes
  • 2 onions
  • 4 game hens
  • oil
  • garlic
  • fresh rosemary
  • seasonings
Preparation:
Chop celery, onions, and potatoes into bite-size pieces. Pour about 3 tablespoons of oil onto the bottom of the Dutch oven, then take a paper towel and rub the oil all over the bottom and sides. Place the celery, onion, potatoes, and carrots in the Dutch oven. Rinse the game hens and pat dry. Place fresh crushed garlic cloves (about 4 each) and rosemary inside each bird. Place game hens on top of vegetables and drizzle with oil (I use olive oil). Season with salt and pepper to taste. Place about 12 charcoals beneath the Dutch oven and about 6 on top. Cook about an hour or until juices run clear.
