Mexican Steak

A camping recipe from John Landstrom. This recipe was developed during camping trips in Colorado years ago, and it has remained a family and guest favorite.

Prep Time: 30 minutes

Ingredients:

  • steak (your favorite cut)
  • salsa
  • lettuce
  • 1 can refried beans
  • steak seasoning of choice
  • hot sauce
  • pepper and garlic salt

Preparation:

Rub steaks with pepper and garlic salt. Cut fat off steaks. Put trimmed fat in frying pan and heat until the fat melts into oil. Using the fat off the steak prevents meat sticking to a hot pan. Brown steaks on both sides and then pour salsa over them and cover. Cook about 5 to 8 minutes, leaving the salsa on top of the steaks. Do not worry about the salsa being too hot, as it will mellow during the cooking.

While the steaks are cooking, cut thin slices of lettuce (quite a bit) and heat the refried beans. When done, remove the steaks with salsa to a plate with some lettuce and refried beans. Serve with steak seasoning, hot sauce, and tortillas on the side, if desired.
