A camping recipe from Catherine Lauter. This recipe has been in my family for as long as I can remember. It's a great way to cook ground beef and one of many one-pot meals my mom would prepare when she was low on time and ingredients. It's also a tried and true camping recipe!

Ingredients:
- 1 Tblsp. cooking oil
- 1 lb. ground beef
- 1 small onion, chopped
- 2 stalks celery, chopped
- 1 tsp. minced garlic
- 2 medium potatoes, diced
- 2 large carrots, sliced
- 1 1/2 cups water
- 1/4 tsp. ground thyme
- salt and pepper to taste
- 2 cups cooked white rice
Preparation:
Heat oil in large pot. Add ground beef, onion, celery, and garlic. Cook on medium heat, stirring occasionally, until beef is browned. Add potatoes and carrots and stir over medium heat about 10 minutes or until potatoes and carrots are almost tender. Lower heat a little, add water, seasonings, and thyme, and continue cooking over medium heat 10-15 minutes until vegetables are tender and stew is thickened (add more water as needed). Adjust seasonings and serve over cooked rice.
