Bean and Egg Burritos

A camping recipe from Andrea Ekeberg. We eat this all the time - at home, when camping, at relatives, even at a hotel. It is filling and super-easy.

This is one of the only ways I've found to have hot eggs while camping.
Prep Time: 20 minutes
Ingredients:
  • 1 can black beans
  • 1 cup salsa
  • 4 eggs
  • flour tortillas
  • shredded cheddar cheese
Preparation:
Rinse black beans with water, if desired. Empty into saucepan with salsa. Cover and bring to a boil. Once it's boiling, turn off the flame and let it sit while cooking the eggs. Break eggs into pan or bowl. Add liquid, if desired. Fry up eggs to your liking. We add water, whisk them, and then fry them. When eggs are done, assemble your burrito with a layer of egg, a scoop of beans, and some shredded cheese. Then fold up tortillas, two edges at first, then one side and then the other, and roll. Feel free to add whatever you have on hand. This could also be a dinner recipe, if you add 1/2 cup water to the mixture and 1 cup instant rice. Just add the rice when the beans start to boil.

Note: If you tend to get gas from beans, make sure to rinse the beans thoroughly before cooking. This helps cut down on the enzymes that react in your stomach.

Variation: Egg Burritos, sent in by Utahtea. You can use crumbled bacon pieces, diced ham pieces, crumbled sausage pieces, or all of them, if you like. Cook the meat and sliced mushrooms in a frying pan. Add green onions, tomatoes, and a little butter just before adding the eggs. Wisk the eggs with a few drops of water (to make them light and fluffy), add grated cheese and keep stirring until you add it to the meat and vegetable mixture. Cook the meat, egg, and cheese until done. Put on a warmed tortilla and enjoy. You can add or take off any vegetable you like or dislike. Sometimes we use celery, if we have it.
