A camping recipe from Teri. My kids and husband rave about these. They're quick and easy, and are a very tasty and healthy break from the traditional hamburger-on-a-bun thing.
Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
- boneless chicken breasts
- lemon pepper or steak seasoning
- jumbo hamburger buns
- mayonnaise
- lettuce
- tomato
Preparation:
At home, pound out the breasts flat and store them in a Ziploc bag. At the campground, season the chicken while it's on the grill, and cook the chicken until tender, turning fairly frequently. Grill the buns during the last few minutes of cooking, if desired, and spread with mayo before adding a breast. Top with lettuce and tomato. Easy and very tasty! Variations could include marinating the chicken in teriyaki before grilling and substituting a slice of pineapple for the lettuce and tomato. Aloha.
