Stoupalaya

A camping recipe from Rhonda. I am a cub scout, boy scout and girl scout leader and our kids enjoy making the foil pack meals, but we always had leftover meat and vegetables. Instead of repacking the food, we cooked it all in one pot and the kids ate it while sitting around the campfire after they had their foil packs. Even boys and girls that did not like cabbage loved this stuff. Where did we get the name? Well, we had a contest. It's like stew, soup and jambalaya, so we named it stoupalaya.
Prep Time: 45 minutes
Ingredients:
  • 1 pound boneless chicken breast
  • 1 pound smoked sausage
  • 1 head of cabbage, chopped
  • 1 pound carrots
  • 5 potatoes, cut up in chunks
  • 1 onion, chopped
  • 2 cans Cajun style tomatoes
  • 2 cans chicken broth
  • seasonings of choice
Preparation:
Cook chicken, sausage and onion in the chicken broth. Add other ingredients and simmer for 30 minutes. Season to taste. We like to use a little Tony's seasoning on it, especially in the winter.
