A camping recipe from Kelly Harbert. This recipe is easy, quick, and so much better than the usual hotdogs and hamburgers most campers have for dinner. I've had other campers stop by our site wondering where we got such good smelling take-out!
Prep Time: 2 hours
Cook Time: 1 hour
Ingredients:
  • 1 ham (size to suit your family)
  • cloves
  • 1 can crushed pineapple
  • 1 can sliced pineapple
  • 1 bag brown sugar
  • 2 large disposable foil roaster pans
Preparation:
I slice the ham, then add it, cloves, pineapple and the brown sugar to the foil roasting pan and cook in my home oven the day before we go camping. After it's done I cover with foil and freeze. At the camp site I set the roasting pan on either the grill or the rack over the campfire. I'm careful to set it to the side of either fire. I cover it with the other roasting pan and re-heat for about an hour.
