Potato Salad

A camping recipe from Celene Fortini. This is a great basic potato salad with lots of room for creativity. Make at home before hand or chop up ingredients to have ready to cook at the campsite.

Prep Time: 30 minutes

Ingredients:

  • 10 pounds potatoes, peeled and cut in chunks
  • 1/2 cup onion, minced
  • 1 cup celery, chopped
  • 2 hard boiled eggs, chopped
  • 2 cups of mayonnaise (more if needed)
  • 2 cloves garlic, minced
  • 3 tablespoons vinegar
  • salt and pepper, to taste

  • [b]Optional Ingredients:[/b]
  • ham
  • green pepper
  • carrots
  • green onions
  • olives
  • cherry tomatoes

Preparation:

Boil potatoes until cooked through (firm not too soft). Drain potatoes, add all other ingredients to hot potatoes, and mix well. If potatoes absorb all the mayonnaise, add more for the desired consistency. Keep chilled.
