Potato Salad

A camping recipe from Patty.
Prep Time: 1 hour, 30 minutes
Cook Time: 0 hour, 0 minute
Ingredients:
  • 6 potatoes, boiled with jackets on
  • 6 boiled eggs
  • 1 stalk celery
  • 1 small onion
  • mayonnaise
  • salt, to taste
Preparation:
Cook potatoes with jackets on until done (fork will enter jacket easily). Cook eggs in the same water as potatoes for the same length of time. Cool potatoes and eggs in the refrigerator for about one hour.

When potatoes and eggs are cold, you are ready to make the salad. Remove jackets from potatoes and discard the jacket. Cut potatoes into cubes. Peel and cut up the eggs. Cut celery and onions into small pieces. Put it all in a bowl and add enough mayonnaise to make mixture creamy (3-4 tablespoons). Salt to taste.

Servings: 6-10
Preparation time: 1 1/2 hours
