Cabbage and Smoked Sausage

A camping recipe from Don N. I have had this many times while camping. This can be an entire meal by itself.

Prep Time: 1 hour, 15 minutes

Total Time: 1 hour, 15 minutes

Ingredients:

  • 1 large head cabbage, cut in 1" pieces
  • 1 pound smoked sausage, cut in 1/4" slices
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 5 large potatoes, cut in 1" pieces
  • 2 large carrots, cut in 1/4" slices
  • 1 stick butter
  • 6 slices American cheese
  • salt and pepper to taste

Preparation:

Combine all ingredients and wrap in a large sheet of aluminum foil. Fold to seal all ends. Place on rack over medium heat for one hour, or until tender.

Servings: 6-10

Easy, tastes great, Member FLmomto4

I made this ahead for our camping trip, and kept it on ice in the cooler for dinner our second day of camping. Since I planned on having it sit for two days before eating it, I used canned potatoes (didn't want them to go brown) and left out the cheese. What a great recipe! The whole family loved it (mom, dad, three teenagers and a 4 yr old) and we had no leftovers.
