Make Ahead Egg Bake

A camping recipe from Amy Mable. My husband loves this for breakfast. It is hearty and delicious, and you can add whatever you like in an omelet. I would not recommend cooking the cheese in the original baking - it hardens and is not really very good that way.
Prep Time: 20 minutes
Cook Time: 20 minutes
Ingredients:
  • 10 eggs
  • 1 onion, chopped
  • 2 pounds sausage patties
  • 1 can mushroom pieces
  • shredded cheese
Preparation:
Cut sausage into bite-size pieces. Mix eggs, onion, sausage and mushrooms together in large bowl. I use precooked sausage patties from Wal-Mart's freezer section, two pounds for about $3. Ladle egg mix into small disposable foil loaf pans (usually get about 5 1/2" X 3" X 2" - they come five to a pack). At home: Bake at 350 degrees, uncovered until top is lightly browned - about 35 minutes. Cover with heavy duty foil. Take shredded cheese in a baggy. Keep refrigerated until ready to use at the campground

At camp: Place individual egg dishes on hot coals until heated in the center (10-20 minutes depending on coals). When heated through, sprinkle shredded cheese on top and melt. Hold your pan on a pot holder or leather glove and eat right out of the container. Little cleanup.
