Fruit Cobbler Delight

A camping recipe from Star Man Jim. The smell of this cobbler baking will have your mouth watering.

Prep Time: 1 hours

Ingredients:

  • 1 #2½ can fruit cocktail
  • 1 #2½ can sliced peaches
  • 1 box yellow or lemon cake mix
  • 1 12-ounce can crushed pineapple
  • 1 cup brown sugar
  • 1/2 cup instant tapioca
  • 1 stick butter, cut into pieces
  • 1/2 teaspoon ground cinnamon

Preparation:

Into a 12" Dutch oven add canned fruit (juice included), tapioca, and cinnamon. Stir to mix. Sprinkle cake mix evenly over top of fruit. Sprinkle brown sugar over top of cake mix. Dab butter all over top of brown sugar. Place lid on oven. Bake for 45 minutes to an hour using 12 briquettes on top of and 12 briquettes below the Dutch oven. Cobbler is done when top is brown and cake has absorbed fruit juices and is no longer dry.

Servings: 8-10
Preparation time: 45-60 minutes

"I have made this recipe several times, and the first time tells the story. It was at a Boy Scout meeting, and it was my son's and my turn to make a Dutch oven treat. This is the recipe I chose. When it was almost done, I had to leave for 40 minutes on an errand. There were 6 boys and 3 other adults left behing, and when I got back, there was only the scrapings of the oven left for me. It doesn't take long to cook it, and it is delicious. Popular with every crowd I cooked it for."
