Sausage Potato Fry

By David Sweet, About.com

A camping recipe from Nancy. This recipe has been a favorite of our family for years. It was discovered by accident when I only had one pan to cook with, so I just threw everything together. The potatoes are crunchy yet soft, the onions sweet, and the meat smokey. Easy. Enjoy.

Prep Time: 40 minutes

Ingredients:

  • 4 or 5 large Idaho potatoes
  • 1 package smoked sausage or Cheddar Wurst, sliced
  • 1 large yellow or white onion, sliced
  • 3 tablespoons oil
  • seasoning salt or salt and pepper, to taste

Preparation:

Peel, wash, and slice potatoes. Slice onion and sausages. Heat oil in large frypan and add potatoes, onion, and seasonings. Cover frypan and cook on medium heat untill potatoes start to brown on bottom (about 20 minutes). Flip potatoes and onions and cook until tender. Add cut up sausages and cook until sausages are heated (only about 5 minutes).

Servings: 4
Preparation time: 40 minutes
