Pimento Cheese Spread

A camping recipe from David. I remember as a kid when you could buy pimento cheese. You could get it sliced just like American cheese. I asked about this at the local grocery store, and they didn't now what I was talking about. Fortunately you can make the next best thing with this easy recipe. I used a bag of finely shredded Colby and Jack cheeses, but most any shredded cheese will do.
Prep Time: 30 minutes
Ingredients:
  • 8 ounces finely shredded cheese
  • 8 ounces of cream cheese
  • 4-ounce jar diced pimentos
  • 1 tablespoon sweet relish
  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice
Preparation:
Allow the cream cheese to soften for an hour at room temperature. Drain the pimentos and mix all ingredients. Store in a covered container and keep chilled in the cooler. Use it as a spread on bread or crackers.

Servings: 6-8
