Corned Beef Spaghetti

A camping recipe from Guy. This is an easy and delicious and nutritious two-pot meal for between 2 to 4 people, it takes little time to do, and it is suited to a two burner camping stove.

Prep Time: 30 minutes

Ingredients:

  • 1 can corned beef
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1-2 garlic cloves, pressed or chopped finely
  • 1 can peeled tomatoes, chopped
  • 1 half tube tomatoe puree concentrate
  • 3 teaspoons Italian seasoning
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon hot chili powder
  • dash soy sauce, optional
  • spaghetti
  • Parmesan cheese

Preparation:

Simply fry onion and garlic in olive oil in a sauce pan until almost soft. Add corned beef (chopped up), tomatoes, tomato puree, seasoning, pepper, chili powder, and optional soy sauce. Simmer for about 15 minutes. Simmer spaghetti in separate sauce pan in salted water until cooked, and then drain well. Top with sauce and grated Parmesan cheese.

Servings: 2-4
