Blackened Chicken

A camping recipe from David. If you like Cajun, you'll like this rub, which you can make from common ingredients in your spice rack. Replace the basil with oregano and use the mix on fish, shrimp, pork chops, or steak. If you use fish or shrimp, reduce cooking time to 3 or 4 minutes per side.

Prep Time: 30 minutes

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion flakes
  • 1 teaspoon paprika
  • 1 teaspoon sweet basil
  • 1 teaspoon thyme
  • 1/2 teaspoon white pepper
  • 1/2 cup melted butter or margarine
  • salt to taste

Preparation:

Mix all spices together. Dip chicken breasts in butter and then coat both sides with the seasoning mix. Grill for 10 minutes per side. After turning, baste the chicken with the remaining butter.

Servings: 4
Preparation time: 20 minutes
