A camping recipe from David. Where I come from they often call these home fries. They are good with dinner, and go great with breakfast too.

Ingredients:
- 2 Idaho potatoes
- 1 large onion
- vegetable oil
- salt and pepper, to taste
Preparation:
Heat a large skillet. Peel and slice potatoes into 1/4 inch slices. Slice onion. Add 2-3 tablespoons of vegetable oil to skillet. Add potatoes and onions to skillet in layers. Salt and pepper to taste. Cook over med-low heat, turning occasionally until the potatoes are golden brown and the onions have started to caramelize.
Servings: 4-6
