Southwest Salsa Eggs

A camping recipe from Missy.
Editor's note: I have cooked something similar using grated cheese, chopped green peppers, and sliced mushrooms. Crumbled bacon or ground sausage would be good too.
Prep Time: 10 minutes
Cook Time: 0 hour, 0 minute
Ingredients:
  • 3 eggs
  • salsa
  • salt and pepper, to taste
  • butter or margarine
  • chopped additives (bacon, cheese, green pepper, onion, mushrooms, cooked ground sausage, tomato, etc.)
Preparation:
Butter a pan and sprinkle liberally with salt and pepper. Add eggs, a handful of veggies (optional), and scramble. When the eggs are almost done, but are still sort of wet, add a spoonful or two of salsa depending on if it is mild or hot. Continue cooking the eggs until they are fluffy. They should look slightly pink.
