Breakfast Burritos

A camping recipe from Cactus Kev. I pack the frozen sausage in a thermal lunch bag with two bottles of frozen water, a small tupperware container of eggs, and the onion. Everything stays cool for the first twenty four hours.

Prep Time: 45 minutes

Ingredients:

  • 4 eggs
  • 2 medium potatoes
  • 1 pound pork sausagee
  • 1/2 onion, chopped
  • 1/4 pound Pepper Jack cheese, cubed
  • Jalepeno powder
  • Cajun seasoning
  • 4 tortillas
  • salt and pepper, to taste

Preparation:

On the night before breakfast, wrap the potatoes in foil and throw them on the campfire for about 30 minutes to partially cook them. The next morning, cook the sausage first while dicing up the (mostly cooked) potatoes in small cubes. Remove the sausage and set aside in the foil from the potatoes. Fry the potatoes in the sausage grease with the seasonings. When the potatoes get light brown, add the chopped onion and return the sausage to the pan. When the potatoes are fully browned, add the eggs and cheese. Mix everything together and cook until the eggs are done. Fill tortillas and enjoy.
