A camping recipe from Fran. Make sure you use enough potatoes for each person. Tastes great and goes good with hamburgers, hot dogs and steaks.
Prep Time: 40 minutes
Ingredients:
  • 8 potatoes, sliced thin
  • 1 onion, diced
  • 1 green pepper, diced
  • 1/2 package shredded cheese
  • salt, pepper and garlic powder, to taste
  • 4 tablespoons butter
Preparation:
You need a piece of foil large enough to double over and seal. Place two tablespoons of butter on the foil. Thinly slice potatoes into the center of the foil and mix in the diced onion, green pepper and cheese. Place two more tablespoons of butter on top. Sprinkle with salt, pepper and garlic powder to taste. Seal the foil edges tightly all around. Cook 15 minutes on one side, then flip over for 15 minutes more on the other. Check for doneness and cook longer, if necessary.

Servings: 6-8
