Smoked Pork Roast

A camping recipe from Herb. For 10 people I would use about a 10-12 pound roast. My favorite pork is boneless country style ribs or just regular ribs. I don't use any sauce on mine as the meat will pick up the good flavors from the hickory and apple juice. If you use any BBQ sauce, use it modestly.
Prep Time: 4 hours
Cook Time: 0 hour, 0 minute
Ingredients:
  • pork roast
  • apple juice
  • hickory chips
  • salt and pepper, to taste
Preparation:
Wrap chips in foil and pierce small holes in foil and place on hot charcoals. Put juice in water pan on grill. Season meat and place on grill, cover grill and let smoke for about an hour and a half. Then cover with foil and cook for another two and a half hours. Maintain heat at about 250 degrees.
