Peach and Orange Danish Pancakes

A camping recipe from Stuart. This recipe is great for backpackers as it can be mostly pre-made at home and packed in a Ziploc bag. The bag can be used to mix the batter by kneading in the wet ingredients. With some practice, the bag can be cut at the corner and used to pour the batter into the fry pan. This is a good breakfast pancake because the raisins and diced peaches retain heat and keep the pancake warm even when eaten in cooler weather by a campfire. Any fruit dried or otherwise can be added, adding to the nutrition needed when camping or hiking.

Prep Time: 15 minutes

Ingredients:

  • 2 cups Biscquik
  • 1 egg (optional)
  • 1/3 cup Tang orange flavored drink
  • 1 4-ounce can of diced peaches
  • 1 tablespoon raisins
  • 1/4 cup milk (optional)
  • cooking oil

Preparation:

Mix all dry ingredients. Add peaches with the juice. Blend in the wet ingredients until there is a batter consistency. Use approximately 1 tablespoon of oil at medium heat. Pour in batter and cook until batter surface bubbles stop, turn over and cook for an additional 1 to 2 minutes or until golden brown.
