A camping recipe from David. This recipe is one of my concoctions. I like to take food I've got in the house and come up with a dish. This turned out so good that I thought I'd share it with you. This recipe takes too long to make at the campground, so prepare it ahead of time at home, take it along in the cooler, and reheat it at the campground.

Ingredients:

Preparation:

In a big pot add

1 can vegetable broth
2 cans chicken broth
2-3 cans of water

bring this to a simmer and add

1 can tomato sauce
1 can Rotel tomatoes and chilies
1 Tbl fresh chopped sweet basil or 1 tsp dried
1 tsp Italian seasoning
1 tsp thyme
1/2 tsp celery seeds
1/2 tsp red pepper flakes
1/2 tsp rosemary
1/2 tsp sesame seeds
1 tsp salt

while the spices are simmering prepare and add the veggies

3 medium carrots, sliced
3 stalks celery, sliced
1 bell pepper, chopped
1 large onion, chopped

In a skillet, brown 2 lbs ground meat (Italian sausage, pork, turkey), drain and add to pot. My last batch I used 1 lb turkey and 1 lb pork. Italian sausage is very good, either ground or sliced. While this is all simmering, open the beans and put them in a strainer in the sink to drain.

1 can butter beans
1 can cannellini bean
1 can dark kidney beans
1 can light kidney beans

After draining, run water over them until the bubbles stop. This helps remove the gassy effect of beans. Add the beans to the pot and throw in a handful of large egg noodles. Cover and simmer for one hour.

Servings: 10-12
