A camping recipe from Tere. This is a true Taino Indian recipe from Cuba, which belonged to my grandmother. I use Kirby's or La Lechonera (mojo), if I can't get my mother's.

Ingredients:
- 3-4 pounds pork roast
- 3-5 medium potatoes
- 5-6 carrots
- 10 cloves of garlic
- 2 large spanish onions
- Mojo seasoning
Preparation:
Cut slits in roast and insert garlic cloves. Brown roast in Dutch oven, cover and roast for two hours over medium hot coals. Then add vegetables quartered. Add 1/2 cup Mojo. Roast one more hour. Slice meat and serve with Mojo seasoning on the side.
