Turkey Meatballs

Prep Time: 20 minutes
Cook Time: 40 minutes
Ingredients:
  • 1 1/2 pound ground turkey
  • 1/4 cup whole wheat bread crumbs
  • 1 egg
  • 1 shallot, chopped
  • 1/2 teaspoon sweet basil
  • 1/2 teaspoon thyme
  • salt and pepper, to taste
  • vegetable oil
  • -
  • Sauce:
  • 1 medium carrot, chopped
  • 1 stalk celery, chopped
  • 1 small onion, chopped
  • 1/2 teaspoon sweet basil
  • 1/2 teaspoon thyme
  • 1 can chicken broth
  • 2 tablespoons corn starch
  • salt and pepper, to taste
Preparation:
Thoroughly mix ground turkey with bread crumbs, egg, shallot and spices. Shape into small meat balls and brown evenly in vegetable oil. For the sauce, simmer carrots, celery and onion in a sauce pan with some vegetable oil. When the onions are translucent, add chicken broth and spices and bring to a boil. Mix corn starch with a little cold water to form a paste and add to sauce pan. Stir constantly until sauce reaches desired thickness. Add meatballs to sauce and heat through. Serve over rice.
