A camping recipe from Wayne. This traditional Dublin saturday night dish was usually served when the men came home from the pub and maybe with a bottle of stout brought home for her.
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients:
  • potatoes, diced (enough for all)
  • bacon, ham or even hot dogs, diced (enough for all)
  • 1 medium onion, diced
  • eggs, minimum 1 per person (beaten)
  • bell peppers, diced (optional)
  • Tobasco sauce, to taste
Preparation:
Mix all ingredients together in a heavy cast iron frying pan and cook until done. Serve hot with favorite morning beverage.

"You can also use SPAM, kielbasa, or polish sausage and it is still yummy! I like to add cheese/s to give it more flavor. Also, spoon into a tortilla if you need that added carb or for ease of serving!"
