Teriyaki Chicken Subs

A camping recipe from Sara. I came up with this for a training camp that I took for Girl Scouts. I sliced everything and marinated it before I left for camp.
Prep Time: 30 minutes
Cook Time: 30 minutes
Ingredients:
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 medium onion, sliced thin
  • 1 bell pepper, sliced thin
  • 1 bottle any brand teriyaki marinade
  • 2 gallon size Ziploc bags
  • 4 8-inch sheets heavy duty aluminum foil
  • 4 sub rolls
  • 4 slices favorite cheese
Preparation:
Place chicken in 1 bag. Add 2/3 bottle of marinade. Seal and mix. Place peppers and onions in other bag and add remaining marinade. Let marinate for recommended time. I used Ken's brand Honey teriyaki marinade. Place 1/4 of the chicken on each sheet of foil. Add peppers and onions and fold to close securely. Cook on hot coals for 15 minutes, flip and cook for 15 minutes more, or until chicken is done. Place in sub roll and add cheese.
