Baby Back Ribs

A camping recipe from David. Baby Back Ribs are a fravorite on the grill. For camping, marinate the ribs overnight, pat them dry before applying a dry rub, and store them in a Ziploc in your cooler until you're ready to grill. They are grilled dry and bbq sauce is applied when served.
Prep Time: 12 hours
Cook Time: 1 hour, 30 minutes
Ingredients:
  • 1 rack of baby back ribs
  • -
  • Marinade:
  • - 1/2 cup cider vinegar
  • - 1/4 cup honey
  • - 1/2 cup orange juice
  • - 1/4 cup Worcestershire sauce
  • -
  • Rub:
  • - 1 tablespoon black pepper
  • - 1 tablespoon cayenne
  • - 1 tablespoon chili powder
  • - 1 teaspoon cinnamon
  • - 1 teaspoon garlic salt
  • - 1 tablespoon paprika
  • - 1 teaspoon rosemary
  • - 1 teaspoon thyme
  • -
  • BBQ sauce (your preference)
  • lots of napkins
Preparation:
Remove membrane from back of ribs. Slice ribs into two portions and place in a Ziploc bag. Mix marinade ingredients, pour over the ribs, close the bag and refrigerate overnight. Next day, rinse the marinade off the ribs and towel dry. Place rub ingredients in a food processor and blend until fine. Rub blend into ribs thoroughly. The ribs are now ready for the grill. They will keep for a couple days in a Ziploc in your cooler.

The recipe is the same up to this point. One time I cooked the ribs on a Weber Baby Q (propane). I set it to the lowest setting and cooked the ribs about 1 hour 30 minutes. They burned a little on the edges, but they tasted great. I would have preferred to cook them longer, but the Baby Q just doesn't burn low enough to slow cook.

The next time I used the Cobb Premier Grill (charcoal). There are no heat settings on the Cobb, but it is better designed to slow cook. This time I cooked the ribs about 2 hours (all on 1 charcoal block). The ribs were nicely carmelized and tasted great too. When it comes to ribs, I prefer the Cobb Premier Grill over the Weber Baby Q.

Whatever grill you use, cook the ribs on the cool side for about 2 hours, or until done. Slice, apply BBQ sauce (I use KC Masterpiece) and serve.
