Shish Kabob Buffet

A camping recipe from David. This recipe is a real crowd pleaser. Lay out a variety of meats, seafood and vegetables so everyone can build their own kabobs. Great grill food, whether at the campground or in your back yard.

Ingredients:

  • meat and seafood (possible choices)
  • - beef sirloin
  • - chicken breast
  • - leg of lamb
  • - lobster
  • - pork loin
  • - scallops
  • - shrimp
  • - turkey breast
  • vegetables (possible choices)
  • - bell peppers
  • - celery
  • - cherry tomatoes
  • - chilies
  • - eggplant
  • - lamb
  • - mushrooms
  • - new potatoes
  • - pearl onions
  • - pineapples
  • - plantain
  • - zucchini
  • - - - -
  • marinade(s)
  • vegetable oil
  • salt and pepper, to taste

Preparation:

A Shish Kabob buffet is a great way to please everyone at the campground. Prepare a variety of components for everyone to use to create their own kabobs. This recipe is best prepared at home the night before a camping trip and then kept refrigerated until you're ready to grill at the campground. First decide on one or several of the meat and seafood choices. Meat can be cubed, placed into containers and marinated. Use your favorite marinade or check out Derrick Riches Top 10 Marinades. The shrimp and scallops need no preparation other than cleaning and storage. The vegetables can all be cubed (about the same size as the meat) and placed in a large Ziploc for storage. At the campground, while the grill is getting hot, lay out the ingredients for the kabobs and tell everyone to come and get it. As everyone assembles their kabob, brush them with a little oil, place them on the grill and cook for 10-20 minutes, turning occasionally to cook all sides.

Tips:
1. rotate vegetables between each piece of meat.
2. shrimp and scallops cook quicker than meat.
3. skewer scallop between ends of shrimp.
4. soak skewers in water so they won't burn on the grill.
5. potatoes grill best when precooked at home.
