A camping recipe from Mary Kay. This is a quick and yummy dish we use at home and camping. So easy and tasty. It is a dish that other veggies could be added (like green beans or even a can of diced tomatoes). We like the clean flavor of the beef, carrots, potatoes and onion.
Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients:
  • 1 pound ground beef
  • 1 can beef bouillon or 1 beef bouillon cube
  • 5 or 6 carrots, chopped
  • 4 potatoes, peeled and cubed
  • 1 medium to large onion, chopped
  • 2 tablespoons vegetable oil (if meat is lean)
  • extra water as needed to cook veggies
  • salt and pepper, to taste
Preparation:
If using lean ground beef, heat vegetable oil in Dutch oven. Brown ground beef and onion together. Add carrots, potatoes and beef broth to pot. Use extra water to barely cover veggies. Bring to boil and turn down immediately. Cover pot and simmer until carrots and potatoes are soft enough to eat. This recipe is better the second day when flavors have melded together.
