Rainbow Trout

A camping recipe from David Braun. This dish has become a traditional favorite during the opening of trout season. If you plan to catch your own fish, please check with your state fish rules and regulations for size and limits, because each state may vary.
Prep Time: 15 minutes
Cook Time: 15 minutes
Ingredients:
  • rainbow trout (1 per person)
  • bacon
  • 2 tomatoes
  • 1 lemon
  • rosemary
  • thyme
  • butter
Preparation:
Gut fish, remove head, and leave the skin and tail. Chop tomatoes. Sprinkle rosemary and thyme inside fish along with a teaspoon of oil or butter and then add chopped tomato. Fold fish together, then wrap 2-3 strips of bacon around filet. Repeat for each fish filet. Wrap each filet in foil, than place over campfire and cook evenly on each side until fish begins to flake. Remove from fire. I suggest serving with wild rice and a green vegetable or corn on the cob, along with a nice glass of chardonnay. Oh yeah, if you happen to be a mushroom hunter and get lucky enough to get a few shrooms, these make for a great extra to top off your dinner.
