Tiroler Grostl

A camping recipe from euroserf. I had a version of this while walking in the Austrian Tyrol. Any meat can be used up, salami, sausage, cold cuts. This is a "filler-up food."
Prep Time: 15 minutes
Ingredients:
  • 4 large cooked potatoes
  • 1 finely chopped onion
  • 1 clove crushed garlic
  • 1 teaspoon dried parsley
  • 1 teaspoon caraway seeds
  • salt and black pepper, to taste
  • 4 hotdogs or equivalent amount of cooked ham, beef or whatever meat you've got
  • 2 tablespoons oil or fat
  • 4 eggs
Preparation:
In a large pan or skillet, gently fry the onion and garlic in half the oil until golden. Add the potatoes in 1 inch cubes with the meat, season with salt and pepper. Put aside in a bowl covered with aluminum foil to keep warm. Fry 4 eggs in rest of oil, divide the potato meat mix into 4 portions and top each with an egg, and sprinkle some caraway seeds and parsley on each serving.
