Ingredients:
- 1 cup quick cooking polenta
- 1 cup dried mushrooms
- 1 tablespoon butter
- 1-2 tablespoons milk powder
- 1-2 tablespoons grated Parmesan
- salt, to taste
Preparation:
At home, pack butter, Parmesan cheese, milk powder and salt into Ziplock bag. Pack mushrooms into a separate Ziplock and reconstitute with a small amount of water for several hours before needed. Boil some water (amount can vary from 1-2 cups) and stir in the polenta. This is best done off the heat source or the mixture becomes too gluggy. While the polenta is soaking for a few minutes, fry up the mushrooms in some oil. Stir butter, cheese, milk powder and salt through the softened polenta and serve with mushrooms on top.
