Fish Chowder

Fish Chowder

A camping recipe from David. A delicious chowder using simple ingredients. After a day of fishing, if you didn't catch enough to have a fish fry, consider making soup.

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Ingredients:

  • 1 pound cod or other firm white fish
  • 1 large potato
  • 1 medium onion
  • 1 large carrot
  • 2 stalk celery
  • 1 cup clam juice
  • 2 cans chicken broth
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • 2 bay leaves
  • salt and pepper, to taste
  • 1/2 cup heavy cream
  • 1/4 cup chopped parsley

Preparation:

Dice all vegetables. Heat a medium size pan, add butter and vegetables. Cook on medium low for 20 minutes until vegetables are tender, but not browned. Add chicken broth, clam juice, bay leaves and thyme. Bring to a boil, add fish, salt and pepper. Reduce heat and simmer for 15 minutes or until fish flakes apart. Add cream and simmer for 5 more minutes. Remove bay leaves, sprinkle with chopped parsley and serve with crusty bread.
